These noodles have a Chinese flavour, so if you love Chinese food but want to give up the greasiness of a take-away this is a deliciously healthy alternative.

Recipe
Equipment: knife, chopping board, mandolin (optional)
Serves 1
Sauce
1 tablespoon of tamari or nama shoyu
½ lime, juice of
1 small garlic clove, crushed
1cm of fresh ginger, finely chopped
1 small red chilli, chopped (optional)
3 tablespoons of cold pressed vegetable oil
Vegetables
½ red onion, finely sliced
100g shiitake mushrooms, finely sliced
½ red pepper, finely chopped
4 asparagus spears, sliced
1 tablespoon of chopped fresh coriander
Noodles
- 2 courgettes
- 1 teaspoon of chopped fresh coriander, to garnish
1. For the noodles, finely slice the courgettes along their length (or use a mandolin if you have one). Then cut each slice into 1cm wide long strips to make ribbon noodles.
2. Mix your sauce, vegetables and courgette noodles together.
3. Best eaten fresh, but will keep in the fridge for 24 hours.
Crossover meal cooked additions: wheat-free or buckwheat noodles/tofu/pork
