THE NEXT GENERATION OF RAW FOOD PREPARATION
To find out more about what promises to be a truly fascinating and value packed call, read on...
From Matthew: “As a long time chef interested in preparing innovative cuisine, my connection to raw foods is two-fold. First to live a healthy and fulfilling lifestyle and, at the same time, creating unique recipes that original, full flavored and well presented. Raw foods have given me the opportunity to combine my life long passion for healthy living with my interest in artistically driven food preparation.
"I will be discussing the future of raw food, both in restaurants and in the home. As awareness increases, and the availability of quality products becomes more abundant, it is far more practical to prepare raw foods that are seasonally and locally driven, with increasingly innovative techniques and food combinations. As a result, some of the early challenges of consuming raw foods (overly heavy nut or fat based recipes, for example) are being overcome by a developing cuisine that can compete with any other, regardless of a diner’s commitment to the lifestyle or not."

About Matthew Kenney:
Matthew Kenney is one of the culinary world’s most dynamic and innovative talents. Working his way up through the ranks of various New York restaurants, Matthew opened his first restaurant in 1993 - an upscale, Mediterranean influenced cuisine. During the following five years, Kenney built and opened several restaurants whose focus was regional Mediterranean cooking. In 1994, Matthew was named one of the Ten Best New Chefs in America by Food and Wine magazine. He also received two James Beard Nominations for Rising Star Chef in America.
After several professional setbacks which included the collapse of his restaurant company, one day he happened to accompany a friend to a “raw vegan” restaurant. Hesitant at first, Matthew not only found his raw meal enjoyable, but was struck by the mental and physical clarity he found upon dining. Bursting with renewed energy, Matthew set about learning all he could about raw cuisine and organic ingredients, and opened Pure Food and Wine in New York in 2004. What at first sounded like a crazy idea went on to take the culinary world by storm and soon become a wildly popular critical success. With this newfound knowledge, he co-authored Raw Food, Real World, a recipe and lifestyle book that has quickly become one of the leading references in the raw food movement. Today Matthew runs Organic Umbrella which encompasses several different raw-related projects including The Plant restaurant and the Blue Green Organic Juice Cafe in New York.
Matthew will be presenting at this year's Fresh Festival on Sunday 29 October 2006.
