Delicious Raw Minted Chocolate recipe for Easter!
Kate Magic shares her 'Minted Recipe'
Peppermint is one of the most popular flavours in chocolate. We find the best method for adding flavourings is with organic essential oils. These are the purest option, and you only need a few drops to get a really quality taste.
Melt the coconut oil and cacao butter together. In another bowl, put the chocolate powder, mesquite, agave nectar, purple corn extract, Crystal Manna and peppermint. Give it all a good stir together, then pour in the melted butters and stir again. Add in the raisins and coconut chips and give one final mix. Pour into a tray and leave in the fridge for three hours. When it’s ready, turn it out and cut into cubes, five across by six down.
You will need...
- 180g or 11⁄2 cups coconut oil
- 60g or 1⁄2 cup cacao butter
- 175g or 13⁄4 cups cacao powder
- 200g or 2 cups Peruvian carob powder
- 3tbsp agave nectar
- 1tbsp purple corn extract (optional)
- 2tbsp Crystal Manna or E3 AFA flakes (optional)
- 5 drops peppermint
- 100g or 1 cup raisins
- 50g or 1 cup coconut chips
